Brew Day 1/16/2022
This is Northern Brewer’s Nightfall Black Saison All-grain kit.
Mash Ingredients
- 10 lbs German Pilsner Malt
- 2 lbs Weyermann Dark Wheat
- 0.75 lb Weyermann Carafa Special III
- 0.25 lb Briess Caramel 60L
Hops
- 1 oz Perle (60 min)
- 1 oz Hallertau (5 min)
Yeast
- Fermentis Safale BE-134
Brew Day (1/16/2022)
Notes:
5 gallons strike water @ 162F
1 tbsp PH 5.2 stabilizer
Hit 150F for mash – held that temp for 1 hour
3.1 gallons sparge water @ 168F
Fly-sparge by hand with 2 cup Pyrex
Pre-boil gravity 1.059
Irish moss @ 15 mins; Wort chiller 1/2 hour
OG: 1.066
~5 gallons wort
Pitched yeast at 72F
This has been fermenting in a pretty cold corner of my house near the front door to keep our new puppy away. At one point, I saw 52F on the carboy thermometer. I hope that will be OK. 2 weeks in primary.
Rack to Secondary (1/30/22)
Racked to secondary – gravity 1.010 (ABV ~7.3%)
Tastes nice and clean. I would like if it was a bit more bitter. But really good overall.
Bottling (2/6/22)
Bottled with 5 oz corn sugar. Yielded 46 12oz bottles (one week in secondary). Final gravity stayed the same.
Tasting
This beer is very bitter. It has that peppery taste like a saison. It’s pretty good… not my favorite but drinkable.
